What should I do if the fish meat is overcooked, dry and tasteless? The chef teaches a way to rescue

It is a fine job to prepare a piece of fish for cooking, and you usually need to know how to adapt to it to avoid cooking the fish over the head. If you have ever cooked the fish on the pot for more than recommended cooking time or baked on the grill for a few more minutes to ensure that the fish is cooked, you must also find that you make the fish too dry, too hard and tasteless, making the dinner disappointing.

On the other hand, undercooked fish will have a sticky texture that is disliked, but if your fish is still sticky after being cooked, it means your fish may not be fresh. So, being able to cook fish just right in a good way seems to be an impossible task, especially when you are just a family chef without special tools and cooking training.

Still, Laughing Spatula's food blogger Rachel Kirk has a simple method that does not require any complicated equipment or skills to determine whether the fish is cooked. Kirk said during an interview with The Takeout: "My mother, she is the founder of our blog and the best chef I know. One of the tricks she taught me is that if you use your fingers to process protein, it should feel like the touch of the palm under your thumb, but it is still a little soft." The fish that has just been cooked should also fall naturally and appear opaque when you slice it with a knife.

How to do it after fish is overcooked

One of the reasons why many people think fish is difficult to cook is that the fish cooks too quickly, which means that it is very important to grasp the cooking time and not leave the boiler. Many fried fish dishes will recommend you to fry each side of the fish for a few minutes, while grilled fish usually takes 15 minutes. The remaining temperature means that even if you remove the croquette from the croquette, the fish will still be cooked for a short period of time; so, if you worry that the fish will be cooked, it is best to be cautious and remove the fish from the croquette a little earlier, rather than a little later.

However, if you accidentally cook for too long, Kirk has a suggestion. She pointed out, "It is difficult to recover from the fish that has been cooked... One way to rescue is to use bread crumbs, flavoring ingredients and eggs to mix them with fish to make fish batters or fish burgers." This is also a good way to save the fish batters and fish burgers. If you are cooking a piece of fish that is unevenly thick, you can also cut the edges of the cooked head at the end.

However, if you really want to cook the perfect fish, Kirk recommends you invest in a temperature measure. "I sincerely suggest that every home cook has a digital temperature scale," she said. Using temperature measurement is the most accurate way to check whether it is cooked. When the temperature inside the fish meat reaches 145 degrees Celsius, the fish is cooked.
